{coffee chip pancake muffins}

It's been way too long since I've shared any recipes! Sheesh, forgive me. So, I'm back in full swing with posting at least one recipe a week for you all to enjoy, or just drool over via the computer screen.

These little gems were inspired by the mini pancake muffins I noticed at the grocery store, which made me think I'd give these a shot for Dave's co-workers. The difference from pancake muffins and muffins is the texture. Muffins are more dense, where as pancake muffins are fluffy, airy, and have a little bite to them.
I decided to take a shot of making coffee chip pancake muffins, and I'm pretty sure they will be winners with the folks who pop them in their mouth.

Coffee Chip Pancake Muffins
yields 24 mini muffins
preheat 350

1 Cup Cake Flour
3 TBSP Sugar
2 TBSP Melted Butter
1 Egg
2/3 Cup Buttermilk
3 TBSP Instant Coffee {with three TBSP hot water}
1 TSP Baking Powder
1/2 TSP Baking Soda
1 TSP Vanilla
Some Chocolate Chips
Some Powered Sugar

1. Mix; egg, butter, sugar, vanilla, instant coffee {in a cup add instant coffee, pour 3 TBSP hot water on top stir and combine to mixture}, and buttermilk {if you don't have buttermilk, put 1 TBSP of lemon juice in bowl and add milk until it reaches 1 cup, let stand for 5-10 minutes}
2. Add flour, sugar, baking powder, baking soda.
3. Pour into greased mini muffin pans about 3/4 full. Add 2-3 chocolate chips to each mini pancake muffin.
4. Bake for 8-10 minutes.
5. Pop them out and shake some powered sugar on top!
And pop them into your mouth and enjoy!!
