homemade monkey bread muffins

Monkey Bread, I've mentioned it a few times on my blog, but this time I wanted to make the biscuit part homemade! And honestly, it does not take that much longer than using store bought biscuits. Monkey Bread is a family favorite so, I decided to bake these gems up for my brother and loaded them up with cream cheese frosting!

To make these muffins you'll need some yeast, don't get scared you'll only have to allow the dough to set for 30 minutes, unlike most breads with yeast, having to wait an hour and than another hour. So here you go!
Biscuits
3 1/3 Cups Flour
1 package of Yeast {2 1/2 tsp}
4 TBSP Sugar
2 TBSP Butter
1 Egg
3/4 Buttermilk
1/4 Water
2 TSP Vanilla
Cinnamon/Sugar Mixture
1 TBSP Cinnamon
1/2 Cup Sugar

1. Warm the buttermilk and water in microwave, about 30 seconds. Once out, add yeast and let sit for 5 minutes.
2. In bowl {you do not need a mixer} add softened butter, egg, vanilla, sugar and mix.
3. Add a cup at a time of the flour, pour in a bit of the buttermilk mixture, add another cup of flour, and repeat until all is mixed in.
4. Mix for about 4 minutes, then set dough aside for 30 minutes.
5. Mix together cinnamon and sugar in a bowl, side aside.
6. After 30 minutes, pull gum ball size pieces of dough and roll {if sticky just make sure your hands are wet and it will help you!} roll into cinnamon and sugar and place into greased muffin tin.
7. You'll add about 6 balls to each muffin tin.

Topping
5 TBSP Butter
1 Cup Brown Sugar
*Chopped pecans if you want!

1. Melt all ingredients on stove top.
2. Pour over dough in muffin tins.
3. Pop them into oven at 350 for 10-12 minutes!
4. Let them cool completely before removing them from muffin tin.

Cream Cheese Frosting
2 1/2 Cups Powered Sugar
4 ounces Cream Cheese
4 TBSP Softened Butter
2 TSP Vanilla Extract
1-2 TBSP of Milk

1. Beat it all together with a mixer.
2. Keep beating until completely smooth, you may need to add a bit of milk depends.
3. Put into a baggy and cut the corner .... Pipe onto muffins, and well... you're finally DONE!

These are perfect because you get your own little serving, and it doesn't leave you completely on a sugar high!
