My brother loves cookies that have frosting on them, I mean who doesn't?! Frosting just adds to the sweetness of the cookies and a bit of moistness {did I just use this horrid word} yes, yes I did. Back to the cookie, I decided to do a regular ol' oatmeal cookie {a variation of a she bakes cookie} and add some cinnamon frosting to the middle!
Yields 15 Sandwiches
Preheat Oven to 350
Cookie:
2 Eggs
1 Stick of Melted Butter
2 TSP Vanilla
1/2 TSP Baking Powder
1/2 TSP Baking Soda
1/2 Cup Sugar
3/4 Cup Brown Sugar
2 Cups Oats
1 1/2 Cup Flour
Filling:
3 TSP Cinnamon
2 TBSP Milk
2 1/2 Powered Sugar
1 TSP Vanilla
2 TBSP Softened Butter
2. Add dry ingredients.
3. Form into small balls {a little more than a TBSP}
4. Bake for 9-11 minutes, until edges start to get golden.
5. Transfer immediately to wax paper.
6. Once cool, pop in freezer for 5 minutes so when you frost, the warmth of cookie does not melt filling.
7. To make filling, just add all ingredients to mixer, you may need to add more milk or more powered sugar!
8. Spoon about a TBSP of filling onto bottom of cookie and smash it into another cookie!
